Asian Chicken Noodle Salad

Easy meal prep salads you can take with you! Loaded with colourful veggies, creamy coconut slow cooker chicken and tangy peanut satay sauce!



Peanut Satay Sauce



  1. Place chicken and all of the ingredients for chicken in a slow cooker for approximately 1 Hour or until fully cooked on the High Setting (Depending on your slow cooker it may take more or less time)
  2. Mix all of the Peanut Satay Sauce ingredients in a medium sized bowl and add hot water. Stir well until fully combined and smooth sauce is formed. You may want to add a bit more water if the sauce is really thick.
  3. Once fully cooked, removed chicken from slow cooker and transfer to a medium sized bowl. Using two fork, pull chicken breasts apart to make shredded chicken, adding the additional chopped cilantro and mix
  4. While the chicken is cooling slightly chopped up salad ingredients
  5. Place jars out and start by adding distributing the peanut sauce evenly between the jars, then add the zoodles (they will stay crisp but soak up the sauce), add sesame seeds and green onion, then add a layer of chicken followed by the cabbage, shredded carrot and salad mix
  6. Cover jars or containers and keep in the fridge for up to 5 days, remove lid and stir with fork and enjoy!


*You’ll need at least 5 Large Glass Jars or Storage Containers – Depending on the size of your jars you may have more or less but the intent is to have 5 meals ready for the week!
