Keto - Low-Carb - Refined Sugar Free

I have never really been a big fan of pumpkin spice.

HELLO?! Is this thing on?

Seriously though, it’s always been a bit too sweet for me. Which makes sense since the Pumpkin Spice Lattes you sometimes pick up from your favourite coffee stop are usually full of refined sugars. I’ve always been a spice girl myself, especially in this crisp fall weather. The Fall is without a doubt my favourite season and I love being outside for it all, frosty or rain drizzle, I’m either sitting on our back deck or walking through the park with my boys dressed all cozy, big scarf, toque, warm beverage in hand.

It’s also my favourite season for hiking. I love hiking when when it isn’t as hot, long sleeves, pants and carrying a 35lb plus child is comfortable, I’m taking credit for that one like it’s me that carries our little guy up and over mountains majority of the time, thanks Joel. The trees changing across the trail paths, leaves all around your feet, getting a little cooler as you get closer to the top. I’m seriously excited as I write this because a girlfriend of mine and I are planning to do the Larch March here in Alberta. The larches go from green to this brilliant golden yellow and light up the valley in between the Rockies. Along with her new born and Wrennyn – adventure awaits!

I’ll be sharing more at some point too on the hikes that we take, what it’s like with a baby/toddler, and some tips and advice on what to do and what to bring so stay close.

Now that we’ve talked all things being outdoors in the fall let’s get back to this Bulletproof Pumpkin Spiced Latte.

I decided to forego the super sweet and left mine more spicy, you could add more sweetener to yours depending on how ‘basic’ you want to get. I also happened to have a Organic Pumpkin Spice blend I had picked up at Planet Organic but if you don’t have it don’t fret! Just add in some ginger, cinnamon & allspice. The Pumpkin Puree does make this beverage thick so depending on your preference blend for as little or long as it is required to get that consistency you’re after.

Grab a mug, your coziest sweater, maybe some Uggs? (ok, done with the jokes) and enjoy all of the warm beverages because we all know what comes after fall…even MORE warm beverages.

INGREDIENTS

1 Cup of Brewed Coffee

2 Tbsp Organic Pumpkin Puree 

1 Scoop Collagen

1 Tbsp MCT Oil

1/3 Cup Coconut Milk or Favourite Nut Beverage

1/2 Tsp Vanilla Extract

1 Tsp of Sweetener (or more if you like yours sweeter)

1/4 Tsp Cinnamon

1/2 Tsp Pumpkin Spice Blend (Ginger, Cinnamon, Allspice)

1/4 Tsp Nutmeg

INSTRUCTIONS

Makes 1 Cup

Brew a cup of your favourite coffee

If using a blender add all ingredients except collagen to the blender and blend

Add in collagen for last 5 seconds

I use an immersion blender, same thing I just add of of the ingredients except for the collagen into a blender cup and add in the collagen for the last 5 seconds

The pumpkin puree makes it a little thicker so depending on how you like it, you might want to blend it a bit more!

Pour into a mug and step outside into that nice crisp fall air and enjoy.
