Easy to Make!

You know you’ve done something right when you serve your fresh made hand pies to your hubby and he starts talking about the couple that lives behind us that just had a baby and the people down the road that just bought a new house, and how he thinks could nice people could use these pies in their lives. And here I am now making pies for the neighbourhood! I guess I should take that as a compliment though no?

Where I made these pies leading up to Cinco de Mayo last week, I really wanted to give them another try before sharing them. I mean they were more than good the first time but if I’m going to be sharing them to people I don’t know, I want to be 100% sure they’re ‘share with your neighbours’ good! Nothing like getting awful unsolicited food…

These pies are really so easy to make, not a ton of ingredients but still lots of flavour. I used minced chicken for mine but this recipe would good really well with beef as well, or even lentils for a more plant-based option. I didn’t make my own pastry for this recipe but if you have the time and patience (I’m not much good in the pastry department) I encourage you to try it. STEPS FOR MAKING PIES

  • Using a 9 inch pie plate, cut your puff pastry sheets in 4 circles
  • Using a skillet, cook your minced meat and black bean
  • Divide filling between 4 pastry circles leaving a 1/2 inch space around the edges and fold to form pies
  • Using a fork or your fingers fold and seal the edges
  • Cut 3 slashes on each pie and sprinkle with toasted sesame seeds
  • Bake pies until puff pastry is golden brown and flakey

Chicken & Black Bean Hand Pies

Easy to make savoury hand pies – Stuffed with minced chicken, black beans, herb and spices

Ingredients

  • 4 Sheets of puff pastry cut into roughly 9 inch rounds (I used a pie plate and cut around it as a guide)
  • 1 Lb of Minced Chicken
  • 1 Tbsp of Olive Oil
  • Juice of half a lime
  • 1/2 Cooking Onion Diced
  • 1/2 Jalapeno Seeded and Diced
  • 1 Tbsp of Minced Garlic
  • 1/2 Can of Black Beans
  • 1 Tsp of Cumin
  • 1 Tsp of Chilli Powder
  • 1/2 Tsp of Sea Salt
  • 1/2 Tsp of Ground Black Pepper
  • 1/3 Cup of Chopped Cilantro
  • 1 Egg (beaten for egg wash)
  • Toasted Sesame Seeds for garnish (optional)

Instructions

  1. Preheat oven to 375F and line a large baking sheet with parchment paper
  2. In a large skillet, heat oil and add onion, garlic, and jalapeños and allow to cook until onions become slightly translucent
  3. Add minced chicken and spices  to skillet and cook until chicken is fully cooked, add cilantro, lime juice and black beans to mixture
  4. Divide mixture onto 4 puff pastry rounds leaving a 1/2 inch border
  5. Fold over to and crimp edges to seal pie, using a fork or folding with fingers
  6. Brush pies with egg wash and cut 3 slashes on each pie
  7. Sprinkle sesame seeds on top
  8. Bake pies for approx 25 minutes or until puff pastry is golden brown
