Quick and Easy – Ready in Under 10 Minutes!
We all know that planning your meals in advance for the week can make life so much easier, but when they pretty much involve putting fresh veggies in a jar and adding gut healing nutritious bone broth over top you know you’re getting the best of everything!
I made this delicious, easy take on Pho with some crunchy fresh veggies I had on hand but don’t be afraid to use what you have as well. You could even add some hard boil eggs, some cooked chicken or thin sliced beef for extra protein and flavour.
This is one of my favourite ways to use bone broth aside from just heating and sipping it. I’m lucky enough to live in close range to a company that makes an amazing variety of bone broth including the one I used here specifically for Pho. Made with grass fed beef, fish sauce, and flavour packed spices like cardamon, coriander and fennel. You can use any bone broth you like, beef, chicken or a plant-based version to make this meal completely vegan. Bone broths also come in powered forms and you can add hot water to mix which makes it even easier to take with you on the go.
Tip when looking for bone broths: I always look for broths made with the highest quality ingredients. Grass Fed, Free Range, Non GMO, Hormone and Antibiotic Free, Organic Ingredients.
I’m a strong advocate for bone broth and use every opportunity I can to include it in mine and my families meals. The list of healing and preventive benefits go on but we know it aids in digestive health, increased energy, pain relief, hormone health and is great for your hair, skin and nails and mental clarity. And you thought you were just getting Pho!
Whether you have access to a stove top of microwave I suggest leaving the vegetables and other ingredients separate and heating the bone broth and pouring it over only just before you are ready to enjoy it! That way your veggies won’t get soggy while they wait and will still have some crunch to them.
Don’t have jars? No problem! Just put your veggies in regular Tupperware or ziplock bag and transfer to a bowl before serving.

Easy Veggie Pho with Bone Broth
Easy Pho made at home packed with crisp veggies and gut healing bone broth!

- Total Time: 10 minutes
- Yield: 2 Servings
- 2 Cups of Bone Broth of Choice (I used Pho Real Bone Broth from Bo & Marrow)
- 2 Cups of Spiralized Veggie Noodles (I used store bought Butternut Squash Noodles)
- 4 Large Brown Mushrooms Washed and Sliced
- 1/2 Small Head of Broccoli Cut into Florets
- 1 Green Onion Chopped
- 1/2 Jalapeno or Chilli Pepper Thinly Sliced
- 1 Tbsp of Tamari
- Sriracha to taste
- Lime Juice to taste
- Thai or Regular Basil to garnish
- In a medium sized pot, heat bone broth
- Divide ingredients into two large jars or two large bowls
- Pour heated bone broth over veggies, garnish with basil, sriracha and lime juice and allow to sit for roughly 5 mins until veggies become slightly tender
