Energy bites are the real deal friends – They are the perfect snack to hold you over to next next meal, or intra activity bite when you need a little extra boost to keep you going, they are cheap to make and pretty hard to mess up!
My energy bites usually are a result of an upcoming event or in this case road trip and contain whatever I have in the pantry. Forming this recipe actually came as a bit of of challenge for me as I usually just throw ingredients in and hit the blend button – this time I took the time to measure out all of the ingredients because they needed to be shared!
I’ve really taken an interest in ways to boost adrenal functions and energy, mostly because of my own issues with hormone function and after reading about the benefits of Ashwagandha Root Powder, I decided to order a bag.
Ashwagandha is a powerful Ayurvedic healing herb. It is an adaptogen, which means it helps the body respond to stress and changing environment. Some of the benefits include:

It does however have a somewhat bitter taste and I was curious as to how I would mask the taste. Nothing a little (but is it ever a little?) nut butter can’t handle! Another great thing about energy bites – the flavour can be as simple or complex as the ingredients you choose and that Stevia Sweetened Chocolate just brings your plain old energy ball to a whole new level.
These bites are super filling too and make more than enough to share with friends in the park, on a hike, or quickly grabbed for a mid afternoon hold over to dinner.

Makes 15 Servings
1 Cup Raw Walnuts
2 Tbsp Organic Chia Seeds
1/2 Tbsp Ashwagandha Root Powder
1/2 Cup Unsweetened Peanut Butter
1 Tbsp Nutivia Coconut Mana
1/2 Tsp Vanilla Extract
1/4 Tsp Pink Himalayan Salt
2 Tbsp Hemp Seeds
1/3 Cup Unsweetened Shredded Coconut
1/3 Cup Krisda Stevia Chips
Shaved Almonds for garnish
Line a baking sheet with parchment paper and set aside
Place walnuts in food processor and pulse
Add chia seeds, ashwaganda root powder, collagen, peanut butter, sunflower seed butter, coconut mana, vanilla extract, and salt and blend together on low
Place hemp seeds and shredded coconut into a small dish and blend
Using a teaspoon, scoop mixture and place into hemp seed, coconut mixture and form a small ball evenly coating with mixture
Place ball onto parchment lined baking sheet and repeat
Place baking sheet in freezer for 20 minutes or until firm but not frozen
While energy bites are cooling, place chocolate chips in a small sauce pan and melt on low heat
Remove energy bites from freezer and drizzle melted chocolate over top
Garnish with almonds and return to fridge to store or go ahead and treat yourself right then!
