Grilled Peach & Halloumi Bite Appetizer

The perfect summer appetizer – cooked in minutes on the grill!

  1. Preheat gril to medium heat
  2. Brush halloumi slices and ciabatta loaf with olive oil
  3. Place halloumi slices, peaches and ciabatta on grill
  4. Paying close attention, allow halloumi and peaches to cook for roughly 3 minutes then flipping over to cook for another 3 minutes or until halloumi starts to soften and peaches become juicy but still firm and ciabatta is slightly toasted but not hard
  5. Remove everything from the grill and cut halloumi slices into halves so there will be 16 bite sized pieces in total
  6. Cut ciabatta loaf into 16 bite sized pieces as well
  7. Using toothpicks to hold together, start assembling with a piece of ciabatta as the base, a piece of halloumi, fresh basil and finished with a peach slice
  8. Serve immediately!
