Bonus Tip! How to make coconut milk in a pinch

Truth be told, I’m not much for sweets. I’ve always been more of a savoury kind of gal so my breakfast go-tos are usually centered around savoury dishes; eggs, veggies, and I usually like to make savoury waffles.

Every now and then though, I get a serious craving for something sweet to start my day, and my favourite way to still fill up with a nice hardy breakfast and not crash long before my next meal is a big bowl of oatmeal. I know most people say oatmeal is blah and just a vessel for delicious toppings but I quite enjoy the taste of oatmeal on it’s own. Especially super creamy oatmeal with a hint of spice like cinnamon or nutmeg. Obviously the toppings are a bonus too, I mean this thing has chocolate chips on top {which by the way, make it double creamy}.

I used to make my oats with nut milk which still did the trick but I got this idea from a recent workshop I attend, which had nothing to do with oatmeal fyi but decided to try and incorporate into this recipe. 

So here is a little something about me plus my super handy & money saving tip next time you’re in a pinch!

I find whenever I commit to making a soup or a sauce that requires creaminess, I’m always out of coconut milk!

While I was at a recent workshop I learnt that you can simple make coconut milk from coconut butter. It’s fast, literally takes 2 minutes to whip up and you can adjust for how much you need. There’s nothing worse than opening up a can of coconut milk when you don’t need the whole thing, amiright?

It’s always A LOT cheaper. Investing $10-$12 in a bottle of coconut butter may seem like a large investment yes, but I know as someone who doesn’t eat dairy, I get a good amount of use out of it. Not to mention I add it often to my latte, elixirs and baking. A can of organic coconut milk ranges roughly from $3 to $5 in my neck of the woods. So a 14 oz jar of coconut butter is going to get you roughly 28 can of coconut milk {please don’t quote me on this, cooking is my jam – not math}.

So next time you’re in a pinch for some coconut milk try:

Adding 1 TBSP of Coconut Butter to 1 Cup of Hot Water and Stir

Instant coconut milk!

How to make the creamiest Dairy Free Oatmeal with just 3 ingredients!

1 Cup of Steel Cut Oats

2 Cups of Water

2 Tbsp of Coconut Butter

1/2 Tsp of Cinnamon

Pinch of Salt

Toppings of Choice!

I used Banana sautéed in Vanilla Brown Butter Ghee and Cinnamon, Enjoy Life Dairy Free Mega Chocolate Chunks, Hemp Hearts, Blueberries and Kumquats


  1. Add oats and cinnamon to a medium sized pot on low and toast lightly for 30 secs to a minute until fragrant, moving oats around the pot
  2. Add 2 cups of water and pinch of salt and raise heat to bring water to a boil, then return to low and allow oats to simmer for roughly 10-15 minutes stirring often
  3. Once oats have thicken add in coconut butter and stir until melted and completely mixed
  4. Remove and serve immediately with favourite toppings!


Makes 2 Servings

  1. I love coconut milk and always try to keep it on hand. But I’ve never tried coconut butter. Definitely on my list to try, especially if I can use it to make coconut milk on the fly! Great tip Tanya! And this creamy dairy free oatmeal sounds fantastic! Happy Monday!

    1. Thanks Leanne! I need to make sure I buy more than one can but this is a good alternative when you forget!
