Salmon Taco Party

Everything you need to throw a great taco party for your next dinner with friends! Made with delicious salmon, super fresh ingredients and margaritas to top it all off!

Instructions

FOR SALMON TACOS

  1. Preheat oven to 350F and line a large baking sheet with parchment paper
  2. Place the salmon fillets on the baking sheet and brush with oil, then season with chili powder, salt and pepper and place in the oven to bake for roughly 20 minutes or until cooked through and flaky
  3. While salmon is baking prepare pico de gallo, combine the diced tomato, diced onion, garlic, jalapeño, cilantro and gently mix, squeeze lime juice over top and season with salt and pepper and combine, then transfer to a bowl
  4. Place your mashed avocado, cheese, cilantro, lime wedges, and jalapeños in serving bowls or on a platter
  5. If you wish to heat your tortillas, you can do so one a pan on low heat for a couple secs per side or until they start to puff, or in the oven directly on the shelf. Careful not to leave them too long or they’ll harden too much
  6. To make margaritas, in a large mixing glass, mix together grapefruit juice, lime juice, simple syrup and stir to combine
  7. Rim 4 glasses with rim salt and add ice, pour 2 oz of tequila into each glass and pour mixture over top
  8. Garnish with jalapeño and lime wedges
  9. You can serve the salmon on a platter with a fork or serve one fillet to each guest
