Sticky Ginger Mandarin Pork with Herb Noodle Salad

A recipe by Food Nouveau from her Simply Citrus Cookbook. Mandarin ginger pork served over a herby noodle salad. Simple flavours that are perfectly paired to make the most delicious dish!



  1. In a small bowl, whisk together soy sauce, honey, ginger, mandarin juice, zest, salt and pepper together. Place pork loin in a ziplock bag and pour marinade over top. Seal bag and allow to marinade in the fridge for at least 1 hour or overnight.
  2. Preheat oven to 350F and heat a large skillet with olive oil over medium-high heat. Remove pork loin from bag and set aside marinade to use later. Place the pork loin in the heated skillet and sear on all sides. Transfer skillet to the oven and allow to cook for approx 20 minutes or until internal temperature reads 145F
  3. Meanwhile, pour the remaining marinade into a small pot. Bring to a boil and then lower heat allowing it to simmer for 5 minutes or until it thickens. Remove from heat and place a lid over top to keep warm
  4. Bring a large pot of water to a boil and add noodles, cooking according to product instructions. Once cooked remove and drain, transfer noodles to a large bowl and drizzle half of the thickened marinade over top. Add herbs and onion, season with salt and pepper and toss to combine.
  5. Once the pork is done, transfer to a cutting board and brush remaining marinade over. Cover with aluminum and allow to rest for 10 minutes before slicing into thing pieces
  6. Divide noodles into 4 separate bowls and divide pork among the bowls as well
